Banana Pancakes Recipe
I would take up any excuse to indulge! I got this recipe a while ago from one of my Nigella Cookbooks. I added my own small island twist by adding banana and spices.
They are delicious!!
1 .5 tablespoon baking powder
1/4 tsp of salt
2 tbsp caster sugar
2 large eggs (beaten)
30 grams butter (melted and cooled)
300 ml milk ( I use coconut milk)
225 grams plain flour
1 tbsp Vanilla Essence
1 pinch of all spice
butter for frying
Sift flour, baking powder, salt and sugar in one bowl.
In another bowl add milk, melted butter and eggs together. Mash down banana with a splash of milk then add to this bowl, followed by vanilla essence and mixed spice. Blend.
Multi-task by slowly pouring liquid mix into flour mix bit by bit, while blending/mixing.
When smooth, use ladle or spoon to pour mix into a medium heated frying pan.
As soon as you see bubbles form on surface of the mix, slowly flip and cook both sides till golden brown.
I top mine with fruit & maple syrup or Agave Nectar. Your choice!
